Im just going over some recovery possibilies, Ive got a NetApp fileserver and multiple E250's and 450's (some very old) on the network. If I create datafiles, control files etc all on the NAS fileserver is it possible I could start the database from another box if one box fails.

Sure, no problem. Remember, though that some files are placed on the boot device like /var/opt/oracle/oratab. If you think you're going to run in this configuration, I would make /var/opt/oracle a link to point somewhere on the Filer.
