You don't need to "convert" any license at all. You have 30 named user licenses and those named users can use their licenses on any number of your databases on any number of your servers. So yes, you can have your 30 users on your database running on AIX and at the same time you can have all those 30 users on your database running on Windows. Assuming, as Jeff said, your servers meet the per-processor minimums for named users.
