I get an error in my logs "The Oracle instance INC has been terminated" on 8.1.6 and NT 4 6a... what does this problem mean? I must restart my server every morning to fix it.

Instance is SGA and the background processes, if that is terminated it basically means your database died and thatñs why you have to bounce it. Check if there any trace file generated in bdump directory.

One of background process died, SGA problems such as Shared_pool is full or large pool.
Normally if this happens Oracle generates a trace file in bdump directory

More info for you... I was doing a backup of the ORACLE directory... would that have caused this problem? If, every night, I made a backup of the entire Oracle directory by copying it ~ without shutting the database down or anything...

well it shouldnt,you dont shut the database down to do backups....?
Is it UNIX? Check bdump, also alert log
