There is a software called WebTrends that we use here to generate reports based on the # hits per hour to our website. As far as hits on tables is concerned, find out from the developers which tables end up with data being inserted into when a user enters data online.

    Talking WebTrends

We use WEBTRENDS here as well. A very useful tool.

I also use WEBTREND, but I am not accounting it for.

On the other hand, irrespective of order has been placed by customer, or not, when a web site is opened, you can insert a row in a table with date and time stamp and session ID info. This count may be compared with the actual number of orders.
