How do I create an ASCII dump of particular schema in the database
The table creation script with thr drop statement before each
and the insert commands of each table

You can use products like

Embracedoro's DBARTISAN

to extract DDL statements into a ascii file from a schema

Ofourse You can also use products from http://www.quest.com to do the above Iam sure but recently I havent been using products from quest.com so you have to go to http://www.quest.com and evaluate their products to check if the product features help you to solve your problem.
